Well-done: 'Mi Quang'. The noodle eaten with crackers. Originating and found mostly in Quang Nam, the host province of the tourist magnet Hoi An, mi Quang belongs to the trinity of dishes to try when in town, beside ‘cao lau’, another noodle, and chicken rice. The toasted rice cracker called ‘banh da’ that tops a bowl of ‘mi Quang’ lends its crunchiness to help diversify the experience.
