Prawn mango salad for hot summer days

With simple ingredients and a refreshing, light sour taste, prawn mango salad is a perfect meal for hot summer days without too much preparation.


- Fresh prawns, steamed (can be replaced by pork belly, pig ear, or nose)

- Sour mango and carrots, julienned

- Mint leaves (or basil, Vietnamese coriander leaves per personal preference)

- Lime

- Garlic

- Red chili

- Fish sauce

- Sugar

- Roasted sesame seeds (add roasted peanuts per personal preference)

Preparation steps:

- Prepare the prawns: Steam the prawns, peel them, and remove the heads.

- Make the dressing: Mix sugar and fish sauce in a 3:3 ratio. Add lime juice, chopped garlic, and chopped chili to the mixture.

- Marinate the prawns: Place the prawns in a bowl. Pour half of the fish sauce mixture over the prawns and let them marinate for about 5-10 minutes.

- Combine the salad: Add the julienned mango and carrot to the bowl with the prawns. Pour the remaining dressing over the mixture and toss to combine. Adjust seasoning to taste, if needed.

- Add herbs: Lightly rub the mint leaves and add them to the salad.
