Le Méridien Saigon releases new chapter of guest chef series

Le Méridien Saigon announced the third chapter of its guest chef series, named "Hong Kong Inspiration", featuring a collaboration between Executive Sous Chef Gordon Tzang and Executive Chef Phi Cong.

This chapter celebrates culinary artistry, blending the rich and diverse flavors of Vietnam and Hong Kong.

Executive Sous Chef Gordon Tzang of JW Marriott Hotel Hong Kong brings with him 26 years of culinary expertise, having started his career with a chef apprenticeship at this hotel in 1994.

Rising through the ranks to Assistant Sous Chef in 2007, Chef Tzang further honed his skills during his tenure at Renaissance Shanghai Zhongshan Park Hotel as Acting Executive Chef.

In 2022, he returned to JW Marriott Hotel Hong Kong as Executive Sous Chef, playing a key role in reopening Fish Bar and driving the hotel’s culinary excellence.

Executive Chef Phi Cong of Le Méridien Saigon, honored as Chef of the Year 2023 by Luxuo Asia Awards, has 18 years of experience at prestigious 5-star hotels and resorts.

Having honed his skills at Cheval Blanc Randheli, a high-end resort by LVMH, Chef Phi Cong is known for his innovative culinary vision that engages all six senses.

In the 2024 Chef's Table Series Pause + Savour, he invites top chefs worldwide to join in a celebration of diverse cuisines.

Pause + Savour's guests will be treated to an exquisite menu, with each dish meticulously crafted to reflect the heritage and creativity of these two culinary traditions.

The menu will feature six curated dishes that highlight the culinary traditions and modern interpretations of Vietnam and Hong Kong.

Famous flavors like Tartar with vine-ripe cherry tomatoes infused with Chinese wine milk curd from Hong Kong will also be prepared by Chef Gordon with a special twist.

Guests can also taste some playful colorful dishes for the first time, like crab and squid with pomelo and plum compote, or braised beef cheek with Lixian yam, goji berries, cabbage, and Szechuan pepper sauce—a famous Chinese street food in Vietnam but upgraded to the 5-star level.

Diners are invited to savor the flavor of Hong Kong through familiar dishes elevated by Chef Gordon, like Yee sang salad, chef’s dim sum, chef’s pork char siu bao bun, fried pork wonton, Nanjing salted duck, Marinate Nanjing Duck, slow-roasted beef topside with soy ginger glaze, braised pork rib noodle soup with pork choy, black mushroom, wonton, Cantonese style...

This third chapter also brings a different dimension of Barson, where the space’s transformed into a mood for good foods and good vibes.

Chef Phi Cong and Chef Gordon Tzang will present a 6-course menu, each course a harmonious blend of Vietnamese and Hong Kong flavors, expected to be a feast for the senses, set against the stylish concept of Barson.

The next chapter will feature a distinguished guest chef from Tokyo, Japan.
