Hang said, "My mother has been selling at Mo Market since 1987, and the shop offers vermicelli noodles with meatballs, ribs, claws, tails, tongues, and braised pork. The dish's flavor remains unchanged over the past 36 years, except for the clearer broth, as the current trend leans towards less greasiness."
To achieve this clear broth, the owner simmers tomatoes, pork bones, green papaya, fish sauce, and spices for five hours.
