Global list of best goat dishes features Vietnam's lime juice version

Northern Ninh Binh Province's signature dish, featuring goat meat steamed with lime juice, has been named one of the world's best goat dishes by culinary website TasteAtlas.

Vietnam's de tai chanh (goat with lime juice) has been ranked 28th among the 36 best goat dishes in the world, according to a list released by TasteAtlas on April 15.

A hallmark of Ninh Binh cuisine, de tai chanh is made by steaming sliced fresh goat meat with lime juice, just enough to cook the meat. The dish is seasoned with chili, lime leaves, shallots, black pepper, lemongrass, and sesame seeds.

It is usually served with figs, pickled green bananas, and soy sauce for dipping.

Ninh Binh's mountain goat is the base for a variety of other dishes, including steamed goat, hotpot, spicy stir-fry, or grilled goat.

Topping the list is Indonesia's sate kambing - grilled goat skewers marinated in sweet soy sauce, galangal and chili. It is followed by Peru's seco de cabrito, a goat stew simmered with cilantro sauce, and Haiti's tassot, fried goat flavored with citrus and onions.
